I also live in the 'boonies,' so to speak. I deal with the kashrut issue by eschewing all animal products and embracing a plant-based whole-foods diet.
* Fresh fruits and veggies do not require a hechsher.
* There are wonderful bread choices with the OU hechsher at every supermarket.
* Silk soy milk is also under the OU.
* Peanut butter and jelly, too.
* Coffee and tea, no problem.
* Cereal
* Hummus, condiments, pickles...all sorts of kosher foods at your local supermarket.
* There are vegetarian/vegan recipes for challah, dessert, pretty much anything one could want.
One set of dishes. Just saying.... :)
