Almond Biscotti
Ingredients:
4 eggs
1 1/4 cups oil
1 1/2 cups sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
1 teaspoon imitation liquid butter
3 1/2 cups flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
2 cups sliced almonds
1 heaping cup old-fashioned oats
Directions:
Combine eggs, oil and sugar well. add vanilla, almond extract and imitation liquid butter. add in flour, baking powder and cinnamon to the mixture. Stir in almonds and oats.
On a large cookie sheet, form dough into 2 loaves about 4 inches wide and 1 inch high.
Bake in a preheated oven of 350° for 35 minutes.
Slice and place each piece on its side on baking sheets and bake for an additional 20 to 30 minutes until golden brown.

Banana Bread
Ingredients:
3 ripe Bananas
1/2 cup Maple Syrup ( or 1/3 cup Agave Nectar)
3 tablespoons Canola Oil
1 1/2 cups Spelt Flour (or any Flour you want to use)
1 1/2 teaspoons Baking Soda
1/4 teaspoon Salt
1 teaspoon Pure Vanilla Extract
3/4 cup Blueberries or Chocolate Chips
Directions:
Heat oven to 350°F.
Oil a loaf pan.
In a bowl, mash bananas and mix in the maple syrup, canola oil, and vanilla.
In a separate bowl sift the dry ingredients together, adding the nuts last.
Blend the wet and dry mixtures and pour into the loaf pan.
Bake for 42 minutes.
Banana Cake with Chocolate Chips
Ingredients:
2 ⅓ cups flour
1 ⅔ sugar
1 ¼ tsp. baking powder
1 ¼ tsp. baking soda
1 tsp. salt
⅔ cup oil
⅓ cup juice & ⅓ cup mocha mix
3-4 ripe bananas
2 eggs
6 ounces chocolate chips (optional)
Directions:
Mix all ingredients except chocolate chips together and pour into pan. Pour chocolate chips on top of batter and put into oven.
You can use a Tube pan or a 9x13 pan, bake at 350° for 45 minutes.
Chocolate Cake
Ingredients:
1 ¾ Cups Sugar
2/3 Cup Oil
2 Eggs
1 Teaspoon Vanilla Extract (I use imitation vanilla)
2 ½ Cups Flour
1 ½ Teaspoons Baking Soda
1 Cup Liquid (I Use ½ cup Orange Juice & ½ Cup Mocha Mix)
½ cup Boiling water and ½ cup Cocoa Powder
1 Tablespoon Coffee
Directions:
Preheat oven at 350*
Mix the oil, eggs and sugar together. After it is all mixed add the rest of the ingredients until the cocoa. Mix the cocoa, boiling water and coffee together then add to the rest of the ingredients. Mix everything together well and pour it into a pan.
Bake at 350* for 40 minutes (stick a toothpick in the cake if it comes out dry it is ready)
A 9x13 pan or a bunt pan can be used.

Ingredients:
21/4 cups flour
1 teaspoon Baking Soda
1 cup Margarine (2 Sticks)
3/4 cup Sugar
3/4 cup Brown Sugar
1 teaspoon Vanilla Extract
2 Eggs
1 package Chocolate Chips
Directions:
Mix all ingredients together, spread batter into a 9 x 13 pan and bake at 350° for 50 minutes or until top becomes brown.
Remove from pan, cut into squares and serve.

Ingredients:
2 cups chilled heavy cream
4 large egg yolks
3 tablespoons sugar
1 teaspoon vanilla
7 oz. fine-quality bittersweet chocolate (chopped)
Garnish:
lightly sweetened whipped cream
Directions:
Heat 3/4 cup cream in a 1-quart heavy saucepan until hot. Whisk together yolks, sugar, and a pinch of salt in a metal bowl until combined well, then add hot cream in a slow stream, whisking until combined. Transfer mixture to saucepan and cook over moderately low heat, stirring constantly. Pour custard through a fine-mesh sieve into a bowl and stir in vanilla.
Melt chocolate in a double boiler or a metal bowl set over a pan of simmering water (or in a glass bowl in a microwave at 50 percent power 3 to 5 minutes), stirring frequently. Whisk custard into chocolate until smooth, then cool.
Beat remaining 1 1/4 cups cream in a bowl with an electric mixer until it just holds stiff peaks. Whisk one fourth of cream into chocolate custard to lighten, then fold in remaining cream gently but thoroughly.
Spoon mousse into 8 (6-ounce) stemmed glasses or ramekins and chill, covered, at least 6 hours. Let stand at room temperature about 20 minutes before serving.
Chocolate Mousse Cake
(8 Servings)
Ingredients:
1 8 oz. container of whip cream
2 pkgs. chocolate pudding pie filling
1 1/4 cup of mocha mix
1 graham cracker pie crust
Directions:
Mix together 4 ounces of whip cream, the pudding and the mocha mix.
Pour the mixture into a pie crust.
Whip the remaining 4 ounces of the whip cream and pour it on the top of the batter.
Refrigerate until ready to serve.
Cinnamon Cake
Ingredients:
3 Cups Flour
1 1/3 Cups Sugar
6 Teaspoons Baking Powder
1 1/2 Cups Liquid (3/4 cup orange Juice, 3/4 cup mocha mix)
1/2 Cup Oil
2 Eggs
2 Tablespoons Sugar
2 Teaspoons Cinnamon
Directions:
Preheat oven to 350°. Mix first six ingredients together very well, until smooth. Grease a 9 x 13 pan and pour in the batter. Mix the sugar and cinnamon together and sprinkle over the whole cake. bake for 40 minutes or until a toothpick comes out clean when inserted into the cake.

4 egg whites
4 cups finely ground walnuts
2 cups sugar
Directions:
Whip the egg white until they form peaks. Mix sugar and walnuts together then add to the egg whites. mix together and form into 1 inch balls.
Bake on 350° for 20 minutes until firm to touch

Ingredients:
*This is a very large recipe (can be divided)
5 cups warm water
6 packets dry yeast
2 tsp. sugar
1 tbsp. salt
1 cup sugar
8 eggs
1 cup oil
6 lbs flour (18-20 cups)
Directions:
Allow yeast to dissolve in water and 2 tsp sugar. Add all other ingredients - except for flour - and mix. Slowly add flour and knead well, until dough feels nice and smooth. Allow to rise, take Challah and say Bracha. Shape. Allow to rise again and bake at 350° for 40 min. until it is brown on the bottom.
Whole Wheat Challa
Ingredients:
5 packets dry yeast
4 cups warm water
2 tsp sugar
dissolve yeast in water and sugar
7 cups whole wheat flour
1 3/4 cups sugar or honey
mix all above ingredients together
8 egg whites
3/4 cup oil
5 cups whole wheat flour (add 2 more cups as needed)
Directions:
Combine first four ingredients, let stand until yeast bubbles. Combine next three ingredients and mix together. Slowly add the next three ingredients and knead until it forms a dough (may be a bit sticky), allow to rise, take Challah and say the Bracha. Shape. Allow to rise again and bake @ 350° for 40 min.
Zisi's Grandmother's Black and White Cake
Ingredients:
1 Cup Oil
2 Cups Sugar
4 Eggs
1 Cup Liquid (I Use ½ cup Orange Juice & ½ Cup Mocha Mix)
3 Teaspoons Baking Powder
2 Teaspoons Vanilla Extract (I use imitation vanilla)
1 Teaspoon Almond Extract (Optional – I do not use this)
3 Cups Flour
2 Tablespoons Cocoa Powder
Directions:
Preheat oven at 350°
Mix the oil, eggs and sugar together. After it is all mixed add the rest of the ingredients besides the cocoa. Mix it all together until everything is well mixed. Pour 2/3 of the mixture into a tube pan. Add Cocoa to the remaining 1/3 mix it together well and pour it over the other mixture. Gently blend the chocolate with the vanilla.
Bake at 350° for 40 minutes (stick a toothpick in the cake if it comes out dry it is ready)
A 9x13 pan can be used as well
Zisi's Mom's Cheese Cake
Ingredients:
1/2 Package graham crackers crushed
1/2 Stick unsalted margarine melted
1 tub Whipped Cream Cheese (8 ounces)
1/4 cup Sugar
1 Teaspoon Vanilla Extract
2 Eggs
1 heaping spoonful Cottage Cheese
Topping:
1/4 pint Sour Cream
1 tablespoon Sugar
1/2 teaspoon Vanilla Extract
Directions:
Mix crushed graham crackers and margarine together, pour mixture into a round 10 inch pan and spread around the bottom of the pan.
Blend the next five ingredients until smooth and pour over graham cracker crust
Bake in oven on 425°for 25 minutes (until the top begins to brown)
Remove from oven and let cool.
Mix the next three ingredients together and spread over the cake, only after it is completely cooled.
Place in the refrigerator until ready to serve.
*Optional: pour blueberry or cherry pie filling on top.

Passover) Brownies
Ingredients:
¾ cup cocoa
½ cup oil
4 eggs
½ cup potato starch
2 cups sugar
2 tbs. regular instant coffee granuals
Pinch salt
1 cup ground walnuts (optional)
Directions:
Mix all ingredients together until smooth, Pour into a a 9x13 pan. Bake on 350° for 40 minutes (until top begins to crack).
