Broccoli Cashew Salad

Ingredients:
2 large heads Broccoli (only use florets)
1 large red onion (diced)
1/2 cup craisins
2 tablespoons Mayonnaise
1 tablespoon sugar
1 tablespoon Lemon Juice

1/2 cup whole cashews

Directions:
Mix all ingredients together except the cashews and let it marinade for a while.
Add the cashews just before serving.
















 


Elka's Sarimi Salad

Ingredients:
1 1/2 packages Imitation Crab
4 avocados
4 cucumbers

Dressing:
3/4 cup Mayonnaise
1 tsp Wasabi powder (mix with 1 drop orange Juice to make a paste)
1/2 teaspoon salt
Juice from 1/2 Lemon

Directrions:
Slice thinly first three ingredients and put into a bowl, In a separate bowl mix all dressing ingredients, then add to sushi mixture.























Hearts of Palm Salad

Ingredients:
5-6 Avocado diced
1 17oz ann Hearts of Plam
1/2 cup red onion diced
2 cups cherry tomatoes halved

Dressing:
Heaping tablespoon Mayonnaise
Salt
Pepper
Juice of half a Lemon - (1 1/2 tbsp)

Directions:
Combine all ingredients together, mix and serve.



















Purple Cabbage Salad

Ingredients:
1 medium head purple cabbage - shredded
1 medium red onion - diced
1/2 container alfalfa sprouts
1 can garbanzo beans (optional)
4 tbsps oil
2 tsps salt

Directions:
Put first three ingredients in a bowl, (and the garbanzo beans). Just before serving add the oil and salt, then mix together and serve.




















Spinach Salad 

Ingredients:

2 Cloves Garlic
½ cup Ketchup
½ tsp Salt
Less than 1 cup Oil
½ cup Vinegar
½ cup Sugar
½ tsp Paprika
½ tsp Mustard 
 
Blend all these ingredients together to get a smooth texture. 
(This dressing stays good in the refrigerator for 3 weeks)
 
Baby Spinach
Grape Tomatoes
Diced Avocado
Sliced mushrooms
Sliced Strawberries or mini Tangerines
Cashew Nuts 

Directions: 
Add dressing as close to serving time as possible, since it gets soggy very quickly. And sprinkle the cashews after the dressing is mixed into the salad.

 

 




 
Strawberry Mango Salad

Ingredients:
1 Romaine lettuce head
1 pint of strawberries - quartered
1 mango - diced

Dressing:
1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 cup sugar














 

 

Zucchini S a lad

Ingredients:
10 medium Zucchini diced
1 large Onion diced
1 tbsp. Oregano
1 tbsp. Garlic powder
1 tsp. Salt
1 tsp. Pepper
1 small can Tomato Paste
1/8 cup Lemon Juice

Directions:
Sauté onion until translucent, add zucchini and sauté for 3 minutes, add all the spices, mix in tomato paste, then add the lemon juice. Allow to simmer for 45 minutes (until zucchini is cooked well) mix a few times during the simmer.
Can be served hot or cold.
